  2. Whisk flour, baking soda, salt, and finely ground Funnel Mill Roast espresso together in a bowl.
  3. Beat butter and both sugars until light and fluffy, about 3 minutes.
  4. Add eggs one at a time, then mix in the Funnel Mill Kyoto Cold Brew Concentrated formula (and Masala Chai Spice tea if using).
  5. Fold in the dry ingredients until just combined, then stir in chocolate chips.
  6. Chill dough for 30 minutes for thicker cookies (optional but recommended).
  7. Scoop rounded tablespoons onto prepared sheets, spacing 2 inches apart.
  8. Bake 9–11 minutes until edges are golden but centers look slightly underdone.
  9. Cool on the pan 5 minutes before transferring to a wire rack.

The Funnel Mill Difference

The quality of your coffee matters here. Our single-origin beans carry distinct tasting notes — vanilla, dark fruit, toasted nuts — that translate beautifully into baked goods. We recommend using a coffee with chocolate or caramel tasting notes for the most harmonious result.

The optional Masala Chai Spice tea addition layers in cardamom, cinnamon, and ginger — a natural and elegant pairing with dark chocolate that gives these cookies a warm, aromatic finish.

Happy baking — and happy brewing.
